Protein Hydrolysates: A Source of Stable Glutamine

Sheffield™ Pharma Ingredients's expertise in protein hydrolysis has been utilized to develop new wheat protein based products that provide a source of heat stable L-glutamine. The figure shows that the peptide bound glutamine in HyPep™ is stable at 37°C for at least 30 days at a pH in the range of 3.0-8.5. It is also possible to give the solution a 5 minute heat treatment at 90°C without any significant decomposition of glutamine.

Free glutamine is highly unstable under these conditions. Heat treatment typically causes about 70% of the free glutamine to decompose. An additional 10% decomposes during 10 day storage at 37°C.

Sheffield™ Pharma Ingredients provides a broad range of peptides that are low in free amino acids. For example, HyPep™ 4601 contains primarily di- and tri-peptides which are thought to be more readily assimilated than the larger peptides.

Another advantage of the glutamine containing peptides of the HyPep™ series is that they avoid the toxic effects that appear when synthetic dipeptides are used as glutamine source. The toxic effects are due to the high concentrations of the remaining amino acid after cleavage and utilization of the glutamine part of the dipeptide.
